Ingredients:
340g or ½ cup of
melted butter
11 eggs
260g or ¾ cup
white sugar
570g or 20oz of
chopped bittersweet chocolate
112g or 1oz of cocoa
120g or 2 cups
of whipped cream
170g or 6oz
heavy cream
120ml or ½ cup
of water
Directions
1.
Preheat the oven
to 175°C/350°F.
2.
Lubricate a 10''
round pan and place a parchment paper inside the pan. Sprinkle some
sugar on it.
3.
Place a double
boiler (or a heavy bottomed sauce pan) on the stove and use it to melt ½ cup
butter and 12oz/340g chocolate. Constantly stir the concoction.
Once mixed well, remove from the heat and let it cool slightly.

Place the egg
yolks and egg whites in separate bowls

Whip the egg
yolks and slowly pour it into the butter and chocolate concoction made is step

In a separate
bowl mix all the white sugar and cocoa powder together and then whip it into

whites until gentle peaks rise. Fold the egg whites into the chocolate batter

mixture into the 10'' round pan and bake it at 350°F for 40 to 50 minutes.

While the cake
is baking, make some delicious chocolate glaze by mixing 8oz of bitter sweet
chocolate and heavy cream in the double boiler until it is silky and creamy.
10. Once the center of the cake is firm remove it from the
oven and cool the cake for 15 minutes. Once cool enough invert the pan slowly
and remove the parchment paper.
11. Pour the deliciously warm glaze over the cake and
smooth it to cover it entirely. Refrigerate if for several hours or till
the glaze has set.
Serve in elegant dessert plates by placing the slices with a dollop of whipped cream on top or cut
strawberries and a scoop of ice-cream. Enjoy the decadence, you've earned it.
